  • 2 medium courgettes, grated
  • 1 cup gram flour (besan)
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Water, as needed
  • Oil, for frying


  1. In a bowl, mix together grated courgettes, gram flour, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt.

  2. Gradually add water and mix well to form a thick batter.

  3. Heat oil in a deep pan for frying.

  4. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy.

  5. Remove the pakoras from the oil and drain on a paper towel to remove excess oil.

  6. Serve hot with chutney or ketchup.
