How To Make Chickpea Fritters with Courgette Salad

Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 courgette, grated
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup breadcrumbs
- 2 tbsp flour
- Salt and pepper to taste
- Oil for frying
- Salad:
- 2 courgettes, thinly sliced
- 1 lemon, juiced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

In a large bowl, mash the chickpeas using a fork or potato masher.

Add grated courgette, chopped onion, minced garlic, cumin, paprika, breadcrumbs, flour, salt, and pepper. Mix well until combined.

Form the mixture into small patties or balls.

Heat oil in a frying pan over medium heat. Fry the fritters until golden brown on both sides. Remove and set aside on paper towels to drain excess oil.

For the salad, combine thinly sliced courgettes, lemon juice, olive oil, salt, and pepper in a bowl. Toss well to coat the courgettes.

Serve the chickpea fritters with the courgette salad.
