Ingredients

  • 2 cans of butter beans (15 oz each), drained and rinsed
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the butter beans, cherry tomatoes, red onion, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the bean mixture and toss to coat evenly.

  4. Serve immediately or refrigerate for later. Enjoy!
