- 2 cans of butter beans (15 oz each), drained and rinsed
- 2 cups cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the butter beans, cherry tomatoes, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
