How To Make Avocado, Roasted Broccoli & Sesame Rice Salad

Ingredients
- 1 cup of broccoli florets
- 1 cup of cooked rice
- 1 ripe avocado, sliced
- 2 tablespoons of sesame oil
- 1 tablespoon of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1 tablespoon of sesame seeds
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

Toss the broccoli florets with 1 tablespoon of sesame oil, salt, and pepper. Roast in the preheated oven for 15-20 minutes, until lightly browned and crispy.

In a large bowl, combine the cooked rice, sliced avocado, roasted broccoli, sesame seeds, soy sauce, rice vinegar, honey, and the remaining tablespoon of sesame oil. Mix well to combine.

Serve the salad chilled or at room temperature. Enjoy!
