Ingredients

  • 2 cups cooked sushi rice
  • 1 lb fresh salmon fillet, diced
  • 1 cucumber, thinly sliced
  • 1 avocado, sliced
  • 4 nori sheets, torn into strips
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked sushi rice, diced salmon, cucumber, avocado, nori, and green onions.

  2. In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, salt, and pepper.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Sprinkle sesame seeds over the top.

  5. Serve immediately and enjoy!
