How To Make Vegan Oatmeal Raisin Cookies Recipe

Soft and chewy oatmeal raisin cookies made without any animal products.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk rolled oats, flour, baking soda, salt, and ground cinnamon until combined.

  3. In a separate large bowl, whisk applesauce, melted coconut oil, brown sugar, and vanilla extract until smooth.

  4. Add the dry ingredients to the wet ingredients and mix until just combined.

  5. Fold in raisins.

  6. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet.

  7. Bake for 12-15 minutes or until golden brown on the edges.

  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
