How To Make Vegan Lemon Bars Recipe

Ingredients
- 1 cup all-purpose flour
- 1/4 cup + 2 tbsp powdered sugar
- 1/4 tsp salt
- 1/2 cup vegan butter, softened
- 1/2 cup fresh lemon juice
- 2 tsp lemon zest
- 3/4 cup white sugar
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- powdered sugar for dusting
Instructions

Preheat oven to 350°F (180°C) and grease an 8×8 inch baking dish.

In a medium bowl, combine 1 cup flour, 1/4 cup powdered sugar, and 1/4 tsp salt. Mix well.

Add softened vegan butter and mix until fully combined.

Press mixture into bottom of greased baking dish.

Bake for 18-20 minutes, until lightly golden brown.

While crust is baking, whisk together lemon juice, lemon zest, white sugar, 1/4 cup flour, and baking powder until smooth.

Pour lemon mixture over baked crust and return to oven for 20-25 minutes, until filling is set.

Once cooled, dust with powdered sugar and cut into squares.
