How To Make Vegan Cherry Chocolate Chunk Cookies
Soft and chewy vegan cookies bursting with juicy cherries and chunks of dark chocolate.

Ingredients
- 1/2 cup vegan butter, softened
- 1/2 cup brown sugar
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup fresh or frozen cherries, pitted and chopped
- 1/2 cup vegan chocolate chunks or chips
Instructions

Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a large bowl, cream together the vegan butter and brown sugar until light and fluffy.

Stir in the flax egg and vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the chopped cherries and chocolate chunks.

Using a cookie scoop or spoon, drop dough onto the prepared baking sheet.

Bake for 12-15 minutes, or until the edges are lightly golden.

Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
