  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup plant-based milk (such as almond or soy)
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup vegan cookies, crushed
  • For the cream layer:
  • 1/2 cup vegan cream cheese
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking dish with parchment paper.

  2. In a mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.

  3. Add in the plant-based milk, melted coconut oil, and vanilla extract. Mix until well combined.

  4. Pour half of the batter into the prepared baking dish and spread it evenly.

  5. In a separate bowl, mix together the vegan cream cheese, powdered sugar, and vanilla extract until smooth.

  6. Spread the cream cheese mixture over the brownie batter in the dish.

  7. Sprinkle the crushed vegan cookies over the cream cheese layer.

  8. Pour the remaining brownie batter over the cookies, spreading it evenly.

  9. Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  10. Allow the brownies to cool completely before cutting into squares.

  11. Serve and enjoy!
