How To Make Vegan Almond Joy Bars

A rich and chocolatey dessert bar with coconut and almonds that is vegan and gluten-free.

Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/2 cup sliced almonds
  • 1/2 cup semisweet chocolate chips

Instructions

  1. In a saucepan, melt coconut oil, maple syrup, and vanilla extract over medium heat.

  2. Add shredded coconut and almond flour to the saucepan and stir until well combined.

  3. Pour the mixture into a 9×9 inch pan lined with parchment paper.

  4. Evenly spread sliced almonds on top of the mixture.

  5. Melt semisweet chocolate chips in the microwave or using a double boiler and drizzle over the almond layer.

  6. Refrigerate for 1-2 hours or until firm.

  7. Cut into bars and serve!
