How To Make Spanish Eggs with Chorizo & Peppers

A delicious dish combining eggs, chorizo, and peppers for a Spanish-inspired breakfast or brunch.

Serves:

Ingredients

  • 8 eggs
  • 150g chorizo, sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large pan over medium heat and add the sliced chorizo. Cook until crispy and the fat has rendered.

  2. Remove the chorizo from the pan and set aside. Leave the rendered fat in the pan.

  3. In the same pan, add the sliced peppers, onion, and minced garlic. Cook until softened and slightly caramelized.

  4. Push the cooked vegetables to one side of the pan and crack the eggs directly into the empty space. Season the eggs with salt, pepper, and paprika.

  5. Cook the eggs until the whites are set and the yolks are still runny, or to your desired level of doneness.

  6. Serve the eggs with the cooked chorizo on top, garnished with fresh parsley.
