How To Make Roast Goose with Potato & Stuffing

A delicious and flavorful roast goose with crispy potatoes and savory stuffing.

Serves:

Ingredients

  • 1 whole goose, about 12 pounds
  • 4 pounds potatoes, peeled and quartered
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large pot, boil the potatoes until tender. Drain and set aside.

  3. In a mixing bowl, combine the breadcrumbs, onion, garlic, rosemary, thyme, salt, and pepper.

  4. Stuff the goose with the breadcrumb mixture, then secure with kitchen twine.

  5. Place the goose on a rack in a roasting pan, breast-side up.

  6. Roast the goose in the preheated oven for about 2-3 hours, or until the internal temperature reaches 165°F (74°C).

  7. Meanwhile, preheat another baking sheet in the oven with some oil.

  8. Remove the goose from the oven and let it rest for 15 minutes before carving.

  9. While the goose is resting, transfer the potatoes to the preheated baking sheet and roast for 30 minutes, or until golden and crispy.

  10. Serve the roast goose with the roasted potatoes and enjoy!
