How To Make Halloumi with Lemony Lentils, Chickpeas & Beets

Ingredients
- 8 oz halloumi cheese, sliced
- 1 cup cooked lentils
- 1 cup canned chickpeas, rinsed and drained
- 2 medium beets, roasted and diced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp cumin
- zest and juice of 1 lemon
- salt and pepper to taste
- fresh parsley, chopped (for garnish)
Instructions

Preheat a grill or grill pan.

In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.

Add cooked lentils, chickpeas, diced beets, cumin, lemon zest, and lemon juice to the skillet. Stir to combine and cook for 5 minutes.

Meanwhile, grill the halloumi cheese for about 2 minutes on each side, until golden brown.

Season the lentils, chickpeas, and beets with salt and pepper to taste.

To serve, divide the lentil mixture onto plates and top with grilled halloumi slices. Garnish with fresh parsley.
