A delicious and healthy version of traditional carrot cake made with low-calorie ingredients.

  • 2 cups grated carrots
  • 1/2 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/2 cup low-calorie sweetener
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, mix together carrot, flour, sweetener, baking powder, cinnamon, and nutmeg.

  3. Add applesauce, eggs, and vanilla extract to the bowl and mix well.

  4. Pour mixture into greased cake pan, and bake for 30-35 minutes.

  5. Let it cool for 5 minutes before serving.
