Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked brown rice
  • 1 cup low-fat chicken broth
  • 1 cup water
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 carrot, peeled and chopped
  • 1 stalk celery, chopped
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a slow cooker, combine the chicken, rice, broth, water, garlic, onion, carrot, celery, paprika, and thyme.

  2. Cover and cook on low for 4 hours, or until the chicken is cooked through and the rice is tender.

  3. Season with salt and pepper to taste.

  4. Serve hot, garnished with chopped fresh parsley.
