Ingredients

  • 250g chicken livers
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup raisins
  • 2 tbsp butter
  • 2 tbsp brandy
  • 1/4 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a pan, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until softened.

  2. Add the chicken livers to the pan and cook until browned on the outside but still slightly pink on the inside, about 3-4 minutes.

  3. Stir in the raisins, brandy, dried thyme, salt, and pepper. Cook for another 2 minutes, allowing the flavors to combine.

  4. Remove from heat and let cool slightly. Transfer the mixture to a food processor and blend until smooth.

  5. Pour the pâté into individual ramekins or into a serving dish. Smooth the top with a spatula or spoon.

  6. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight, to allow the pâté to set.

  7. Serve the pâté chilled with toast points, crackers, or crusty bread.
