Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves of garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 cup of salsa
  • 1 cup of cauliflower rice
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F.

  2. In a large skillet, heat the oil over medium-high heat.

  3. Add the ground beef, onion, and garlic. Cook until the meat is no longer pink.

  4. Add the red and green bell peppers, chili powder, cumin, salsa, and cauliflower rice. Mix well.

  5. Season with salt and pepper to taste.

  6. Transfer the meat mixture to a casserole dish and spread the shredded cheese on top.

  7. Bake for 25-30 minutes until the cheese is melted and bubbly.
