How To Make Keto Chicken Caesar Salad Recipe
A low carb, high-fat salad with tender chicken and a homemade Caesar dressing.

Ingredients
- 2 large chicken breasts, sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 8 cups romaine lettuce, chopped
- 1/2 cup grated Parmesan cheese
- 1/2 cup almond flour
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 tbsp lemon juice
- 2 tsp Dijon mustard
- 2 cloves garlic, minced
Instructions

Preheat oven to 375°F. Line a baking sheet with parchment paper.

In a bowl, toss chicken slices with olive oil, salt, and pepper. Spread on the prepared baking sheet and bake for 20 minutes, until cooked through.

While the chicken is baking, make the dressing. In a small bowl, mix together the almond flour, 1/2 cup Parmesan cheese, mayonnaise, lemon juice, Dijon mustard, and garlic until well combined.

In a large bowl, toss the romaine lettuce with the dressing until coated. Divide the lettuce among four plates.

Top each plate with the baked chicken slices and sprinkle with the remaining 1/2 cup of Parmesan cheese.
