Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup dried lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (Optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, sauté until translucent.

  3. Add carrots and celery, cook until vegetables are tender.

  4. Add lentils, vegetable broth, cumin, and paprika. Bring to a boil, then reduce heat and simmer for 25 minutes.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh parsley if desired.
