How To Make Dairy-Free Chickpea Curry Recipe
This hearty and flavorful curry is dairy-free and packed with protein and vegetables.
Serves:
Ingredients
- 1 tbsp of coconut oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp of curry powder
- 1/2 tsp of cumin
- 1/2 tsp of cinnamon
- 1/2 tsp of ginger
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- 1 sweet potato, diced
- 1 zucchini, diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Heat coconut oil in a large skillet over medium heat.

Add onion and garlic, sauté for 2-3 minutes until softened.

Add curry powder, cumin, cinnamon, and ginger. Cook for 1 minute, stirring constantly.

Add chickpeas, tomatoes, vegetable broth, sweet potato, and zucchini. Bring to a simmer and cook for 20-25 minutes until vegetables are tender.

Season with salt and pepper to taste.
