How To Make Dairy-Free Chickpea Curry Recipe

This hearty and flavorful curry is dairy-free and packed with protein and vegetables.

Ingredients

  • 1 tbsp of coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp of curry powder
  • 1/2 tsp of cumin
  • 1/2 tsp of cinnamon
  • 1/2 tsp of ginger
  • 1 can of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • 1 sweet potato, diced
  • 1 zucchini, diced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large skillet over medium heat.

  2. Add onion and garlic, sauté for 2-3 minutes until softened.

  3. Add curry powder, cumin, cinnamon, and ginger. Cook for 1 minute, stirring constantly.

  4. Add chickpeas, tomatoes, vegetable broth, sweet potato, and zucchini. Bring to a simmer and cook for 20-25 minutes until vegetables are tender.

  5. Season with salt and pepper to taste.

  6. Garnish with cilantro and serve over rice or with naan bread.
