How To Make Dairy-Free Quinoa Salad Recipe
A refreshing and healthy salad made with quinoa, veggies, and a dairy-free dressing.

Ingredients
- 1 cup uncooked quinoa
- 2 cups water or vegetable broth
- 1 red bell pepper, chopped
- 1 small cucumber, chopped
- 1/2 red onion, chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions

Rinse quinoa in a fine-mesh strainer and add it to a pot with water or vegetable broth. Bring to a boil, reduce heat and let simmer for 12-15 minutes, or until quinoa is tender and the liquid is absorbed.

In a large bowl, add cooked quinoa, chopped bell pepper, cucumber, red onion, parsley, and mint. Mix well.

In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.

Pour the dressing over the quinoa mixture and toss to coat.

Serve chilled or at room temperature.
