  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/4 cup vegetable broth
  • 8 small corn tortillas
  • 1 avocado, diced
  • Fresh cilantro leaves, for serving
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 3 minutes.

  2. Add red bell pepper, chili powder, cumin, smoked paprika, salt, and black pepper to the skillet. Cook for an additional 3 minutes.

  3. Stir in black beans and vegetable broth. Cook for 5 minutes, until the mixture has thickened slightly.

  4. Heat tortillas in the microwave or a dry skillet until lightly charred.

  5. Spoon black bean mixture into the center of each tortilla. Top with diced avocado and fresh cilantro leaves. Serve with lime wedges on the side.
