  • 2 tbsp of olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 2 cups of broccoli florets
  • 1/4 cup of vegetable broth
  • 1 tbsp of soy sauce
  • 1 tsp of cornstarch

Instructions

  1. Heat olive oil in a wok over high heat.

  2. Add onion and garlic, stir-fry for 1 minute.

  3. Add carrots, red bell pepper, and broccoli, stir-fry for 3-5 minutes.

  4. In a small bowl, mix vegetable broth, soy sauce, and cornstarch.

  5. Add the mixture to the wok and stir-fry for 2-3 minutes until the sauce thickens.
