  • 1/2 cup vegan butter
  • 1/2 cup granulated sugar
  • 1 flax egg (1 tbsp flaxmeal + 3 tbsp water)
  • 1 tsp vanilla extract
  • 1 lemon, juiced and zested
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp poppy seeds

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together vegan butter and sugar until light and fluffy.

  3. Add in the flax egg, vanilla extract, lemon juice, and lemon zest. Mix well.

  4. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet mixture and mix well.

  6. Fold in poppy seeds until well combined.

  7. Roll cookie dough into small balls and flatten on the prepared baking sheet.

  8. Bake for 12-15 minutes until lightly golden brown on the edges.

  9. Let cool for a few minutes before serving.
