How To Make Dairy Free Gingerbread Cookies Recipe

Delicious, spicy gingerbread cookies without any dairy.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut oil, softened
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F.

  2. In a medium mixing bowl, whisk together the flour, spices, baking powder, baking soda, and salt.

  3. In a separate large mixing bowl, cream the coconut oil, molasses, brown sugar, flax egg, and vanilla until well combined.

  4. Gradually stir in the dry ingredients until a thick dough forms.

  5. Turn the dough out onto a lightly floured surface and roll out to 1/4″ thickness.

  6. Use cookie cutters to cut out desired shapes and place them on a parchment-lined baking sheet.

  7. Repeat rolling and cutting with remaining dough.

  8. Bake for 10-12 minutes, or until edges are lightly browned.

  9. Allow to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
