How To Make Dairy Free Gingerbread Cookies Recipe
Delicious, spicy gingerbread cookies without any dairy.

Ingredients
- 2 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut oil, softened
- 1/2 cup molasses
- 1/4 cup brown sugar
- 1 flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water)
- 1 tsp vanilla extract
Instructions

Preheat oven to 350°F.

In a medium mixing bowl, whisk together the flour, spices, baking powder, baking soda, and salt.

In a separate large mixing bowl, cream the coconut oil, molasses, brown sugar, flax egg, and vanilla until well combined.

Gradually stir in the dry ingredients until a thick dough forms.

Turn the dough out onto a lightly floured surface and roll out to 1/4″ thickness.

Use cookie cutters to cut out desired shapes and place them on a parchment-lined baking sheet.

Repeat rolling and cutting with remaining dough.

Bake for 10-12 minutes, or until edges are lightly browned.

Allow to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
