Ingredients

  • 2 lbs boneless leg of lamb
  • 4 large potatoes, peeled and thinly sliced
  • 2 onions, thinly sliced
  • 2 cups beef or vegetable broth
  • 4 cloves of garlic, minced
  • 2 sprigs of fresh rosemary
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C). Season the lamb with salt, pepper, and minced garlic.

  2. In a large roasting pan, arrange the sliced potatoes and onions in layers. Season each layer with salt, pepper, and minced garlic.

  3. Pour the broth over the potatoes and onions. Place the lamb on top, and add the fresh rosemary sprigs.

  4. Drizzle the lamb and potatoes with olive oil. Cover the roasting pan with foil.

  5. Roast in the preheated oven for 1 hour. Remove the foil, baste the lamb with the pan juices, and continue roasting for another hour, or until the lamb is cooked to your desired doneness and the potatoes are golden and tender.

  6. Remove the lamb from the oven and let it rest for 10 minutes before carving.

  7. Serve the roast lamb with the pommes boulangère and spoon some of the flavorful pan juices over the meat and potatoes.
