How To Make Spelt Spaghetti with Chilli, Sprouting Broccoli & Pancetta

Ingredients
- 400g spelt spaghetti
- 200g pancetta, diced
- 2 cloves of garlic, minced
- 1 red chilli, finely chopped
- 200g sprouting broccoli, trimmed
- 1/4 cup olive oil
- Salt, to taste
- Grated Parmesan cheese, for serving
Instructions

Cook the spelt spaghetti according to package instructions until al dente. Drain and set aside.

Heat olive oil in a large pan over medium heat. Add the minced garlic and chopped chilli, and cook for 1 minute until fragrant.

Add the diced pancetta to the pan and cook until crispy and golden brown.

Meanwhile, bring a pot of salted water to a boil. Blanch the sprouting broccoli for 2-3 minutes until tender-crisp. Drain and set aside.

Add the cooked spelt spaghetti and blanched sprouting broccoli to the pan with the pancetta. Toss everything together until well combined.

Season with salt to taste. Serve hot, sprinkled with grated Parmesan cheese.
