Ingredients

  • 2 large aubergines
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup Greek yogurt
  • 1/4 cup chopped fresh coriander
  • 1 clove garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Slice the aubergines into 1/2-inch thick rounds and place on a baking sheet.

  3. Drizzle the olive oil over the aubergines and sprinkle with cumin, paprika, salt, and black pepper.

  4. Toss to coat evenly.

  5. Bake in the preheated oven for 30-35 minutes, until golden brown and tender.

  6. In a small bowl, mix together the Greek yogurt, chopped coriander, minced garlic, and lemon juice.

  7. Season with salt and black pepper to taste.

  8. Serve the baked aubergines with the coriander yogurt dressing.
