Ingredients

  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tsp sugar
  • 1 sheet of puff pastry, thawed
  • 1 cup grated Gruyere cheese
  • Fresh thyme leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they start to soften, about 5 minutes.

  3. Reduce the heat to low and continue to cook the onions, stirring occasionally, until they are golden brown and caramelised, about 30 minutes. Sprinkle with sugar and cook for an additional 5 minutes. Season with salt and pepper.

  4. Roll out the puff pastry and transfer it to a baking sheet lined with parchment paper. Score the pastry with a knife, leaving a 1-inch border around the edges.

  5. Spread the caramelised onions evenly over the pastry, staying within the border. Top with grated Gruyere cheese.

  6. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.

  7. Remove from the oven and let cool for a few minutes. Sprinkle with fresh thyme leaves before serving.

  8. Cut into slices and serve warm.
