Ingredients
- 1 sheet of ready-made puff pastry
- 2 red onions, thinly sliced
- 4 slices of prosciutto
- 150g mushrooms, sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 100g goat cheese, crumbled
- Fresh thyme leaves for garnish
Instructions

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Roll out the puff pastry sheet onto the prepared baking sheet and prick the surface with a fork.

In a large pan, heat the olive oil and butter over medium heat. Add the sliced onions and cook until caramelised, stirring occasionally.

Add the sliced mushrooms to the pan and cook until they are tender and any liquid has evaporated.

Stir in the balsamic vinegar and season with salt and pepper to taste.

Spread the caramelised onions and mushrooms evenly over the puff pastry, leaving a small border around the edges.

Tear the prosciutto into smaller pieces and scatter them over the top of the tart.

Sprinkle the crumbled goat cheese over the tarts and bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp.

Remove from the oven and garnish with fresh thyme leaves.

Allow the tart to cool for a few minutes before slicing and serving.
