Ingredients

  • 1 cup shredded coconut
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/4 cup butter, melted
  • 1/2 cup raspberry jam
  • Powdered sugar, for dusting
  • Fresh raspberries, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease 4 ramekins or oven-safe dishes.

  2. In a bowl, mix together the shredded coconut, flour, and sugar.

  3. In a separate bowl, whisk the eggs until well beaten. Add the melted butter and mix well.

  4. Gradually add the coconut mixture to the egg mixture, stirring until well combined.

  5. Spoon half of the batter into the prepared ramekins. Make a small well in the center of each and fill with raspberry jam.

  6. Top with the remaining batter, covering the raspberry jam completely.

  7. Bake for 20 minutes or until golden brown and set.

  8. Remove from the oven and let cool for a few minutes. Dust with powdered sugar and garnish with fresh raspberries.

  9. Serve warm and enjoy!
