Ingredients
- 1 cup rolled oats
- 2 cups coconut milk
- 1 cup raspberries
- 2 tbsp honey
- 1/4 cup shredded coconut
- 1/4 cup chopped almonds
- 1 tsp vanilla extract
Instructions

In a saucepan, combine the rolled oats and coconut milk. Bring to a simmer over medium heat.

Cook the oats for about 10-15 minutes, stirring occasionally, until they are soft and creamy.

Mash the raspberries with a fork and stir them into the cooked oats along with the honey and vanilla extract.

Continue to cook for another 5 minutes until the raspberries are heated through.

In a small pan, toast the shredded coconut and chopped almonds until golden brown.

Serve the raspberry coconut porridge in bowls and top with the toasted coconut and almonds.
