Ingredients

  • 1 cup rolled oats
  • 2 cups coconut milk
  • 1 cup raspberries
  • 2 tbsp honey
  • 1/4 cup shredded coconut
  • 1/4 cup chopped almonds
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, combine the rolled oats and coconut milk. Bring to a simmer over medium heat.

  2. Cook the oats for about 10-15 minutes, stirring occasionally, until they are soft and creamy.

  3. Mash the raspberries with a fork and stir them into the cooked oats along with the honey and vanilla extract.

  4. Continue to cook for another 5 minutes until the raspberries are heated through.

  5. In a small pan, toast the shredded coconut and chopped almonds until golden brown.

  6. Serve the raspberry coconut porridge in bowls and top with the toasted coconut and almonds.
