This gluten-free Indian carrot pudding can be enjoyed hot or cold! Made by cooking carrots in milk and then flavoring it with sugar, cardamom, nuts, and raisins.

Ingredients

  • 2 cups carrots, coarsely grated
  • 1 cup milk
  • ½ cup almonds or cashews, chopped
  • ¼ cup raisins
  • ¼ cup sugar
  • ¼ cup cream
  • ¼ tsp cardamom

Instructions

  1. Put shredded carrots and milk in a pot. Boil over medium heat to soften.
  2. Sprinkle chopped nuts, raisins, sugar, cream, and cardamom and mix well.
  3. Serve and enjoy!
