How To Make Instant Pot Gajar Halwa Recipe

A classic Indian dessert made with shredded carrots, milk, sugar, and flavored with cardamom powder.

Ingredients

  • 4 cups shredded carrots
  • 2 cups whole milk
  • 1 cup sugar
  • 1/4 cup ghee
  • 1/4 cup chopped cashews
  • 1/4 cup raisins
  • 1 tsp cardamom powder
  • 1/2 tsp nutmeg powder
  • Pinch of saffron (optional)

Instructions

  1. Turn on the Instant Pot and select the sauté function. Add ghee and let it melt.

  2. Add shredded carrots and sauté for 2-3 minutes.

  3. Add milk, sugar, cardamom powder, nutmeg powder, and saffron (if using) and mix well.

  4. Close the Instant Pot with the lid and select the pressure cook function. Cook on high pressure for 10 minutes.

  5. After 10 minutes, let the pressure release naturally for 5 minutes and then do a quick release.

  6. Open the lid, switch back to the sauté function and cook for another 5-7 minutes or until most of the liquid evaporates.

  7. Turn off the Instant Pot, add chopped cashews and raisins and mix well.

  8. Serve hot or cold garnished with more nuts.
