Ingredients

  • 1 cup almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp almond extract
  • 1/4 cup raspberry jam
  • 1/4 cup sliced almonds
  • Whipped cream, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin.

  2. In a bowl, mix together almond flour, sugar, melted butter, and almond extract until well combined.

  3. Press about a teaspoon of the mixture into the bottom of each muffin cup.

  4. Spoon a small dollop of raspberry jam onto the center of each crust.

  5. Sprinkle sliced almonds on top of the jam.

  6. Bake for 15 minutes, or until the edges are lightly golden.

  7. Allow the Bakewell shots to cool completely before removing them from the muffin tin.

  8. Serve with a dollop of whipped cream on top.
