How To Make Rhubarb & Custard Sandwich Biscuits

Ingredients
- 1 cup of rhubarb, chopped
- 2 tbsp of sugar
- 1 cup of custard
- 8 sandwich biscuits
Instructions

Preheat the oven to 350°F (180°C).

In a saucepan, combine the rhubarb and sugar. Cook over medium heat until the rhubarb is soft and the sugar has dissolved.

Remove the saucepan from heat and let the rhubarb cool completely.

Spread a layer of custard onto one side of each sandwich biscuit.

Spoon a dollop of the cooked rhubarb onto one half of the custard-coated biscuit.

Sandwich with another biscuit to create the sandwich biscuit.

Repeat with the remaining biscuits.

Serve the Rhubarb & Custard Sandwich Biscuits immediately or refrigerate for a couple of hours to allow the flavors to meld together.
