Glazed Strawberry Lemon Streusel Muffins Recipe

Made with fresh strawberries and topped with a lemon-pecan crumble, these muffins are truly gourmet.

How To Make Glazed Strawberry Lemon Streusel Muffins

  • 1 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/2 cup milk
  • 1/2 cup butter (or margarine (melted))
  • 1 egg
  • 1 1/2 cup fresh strawberries (chopped)
  • 1 tsp. lemon peel (grated )

Lemon Streusel Topping:

  • 1/4 cup pecans (chopped )
  • 1/4 cup brown sugar (packed )
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. lemon peel (grated )
  • 1 Tbsp. butter (or margarine (melted))

Lemony Glaze:

  • 1/2 cup powdered sugar
  • 1 Tbsp. fresh lemon juice
  1. Preheat oven to 375 degrees.
  2. Paper-line 12 (2 1/2 inch) muffin cups.
  3. Prepare streusel and glaze and set aside.
  4. For topping, combine pecans, brown sugar, flour, cinnamon, and lemon peel.
  5. Add butter and stir until crumbly.
  6. For glaze, combine sugar and lemon juice in small bowl, stirring until smooth.
  7. For muffins, combine flour, sugar, baking powder, cinnamon and salt in large bowl.
  8. Combine milk, butter and egg in small bowl until well blended.
  9. Stir into flour mixture just until moistened.
  10. Fold in strawberries and lemon peel.
  11. Spoon evenly into prepared muffin cups.
  12. Sprinkle Lemon Streusel Topping evenly over tops of muffins. Bake 20- 25 minutes or until toothpick inserted in center comes out clean.
  13. Remove from pan.
  14. Cool on wire rack 10 minutes.
  15. Drizzle Lemony Glaze over tops of warm muffins.
  16. Serve warm or cool completely.
