Ingredients

  • 1 pound of cooked shrimp, chopped
  • 2 cups of diced honeydew melon
  • 1/2 red onion, diced
  • 1 jalapeno, seeded and minced
  • 1/4 cup of freshly squeezed lime juice
  • 1/4 cup of chopped cilantro
  • Salt and pepper to taste
  • Tostadas or tortilla chips for serving

Instructions

  1. In a large bowl, combine the chopped shrimp, honeydew melon, red onion, and jalapeno.

  2. Stir in the lime juice and cilantro, then season with salt and pepper to taste.

  3. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

  4. Serve the ceviche chilled with tostadas or tortilla chips.
