How To Make Honeydew and Chicken Skewers Recipe

Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 honeydew melon, seeded and cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tbsp. fresh lime juice
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 8 bamboo skewers, soaked in water for 10 minutes

Instructions

  1. Preheat grill over medium-high heat.

  2. Thread chicken, honeydew, and red onion onto skewers, alternating chicken and fruits/vegetables.

  3. In a small bowl, whisk together olive oil, honey, lime juice, salt, and pepper.

  4. Brush skewers with the olive oil mixture.

  5. Grill skewers for 4-5 minutes on each side, or until chicken is cooked through.

  6. Serve hot and enjoy!
