How To Make Amaretti & Sultana Cheesecake

Ingredients

  • 200g amaretti biscuits
  • 100g unsalted butter, melted
  • 250g cream cheese
  • 100g sugar
  • 2 eggs
  • 100g sultanas
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Crush the amaretti biscuits into fine crumbs.

  3. In a bowl, mix the melted butter with the amaretti biscuit crumbs until well combined.

  4. Press the biscuit mixture into the base of a greased 20cm springform cake tin.

  5. In a separate bowl, beat the cream cheese, sugar, eggs, and vanilla extract together until smooth.

  6. Stir in the sultanas.

  7. Pour the cream cheese mixture over the biscuit base.

  8. Bake in the preheated oven for 45 minutes, or until set and lightly golden on top.

  9. Allow to cool in the tin, then refrigerate for at least 2 hours before serving.

  10. Serve chilled and enjoy!
