Ingredients

  • 4 eggs
  • 150g golden granulated sugar
  • 200g Amaretti cookies, crushed
  • 120g ground almonds
  • 1 tsp baking powder
  • 100g unsalted butter, melted
  • 1 tsp vanilla extract
  • 50g dried cranberries
  • 50g chopped almonds
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a round cake tin.

  2. In a large bowl, beat the eggs and sugar until pale and fluffy.

  3. Fold in the crushed Amaretti cookies, ground almonds, baking powder, melted butter, and vanilla extract.

  4. Stir in the dried cranberries and chopped almonds.

  5. Pour the batter into the prepared cake tin and smooth the top.

  6. Bake for 40-45 minutes or until a skewer inserted into the center comes out clean.

  7. Allow the cake to cool in the tin for 10 minutes, then remove and transfer to a wire rack to cool completely.

  8. Once cooled, dust with icing sugar before serving.
