How To Make Orange & Rhubarb Amaretti Pots

Ingredients
- 3 stalks of rhubarb, cut into small pieces
- 2 oranges, juiced
- 1/4 cup of sugar
- 1/4 cup of water
- 1 tsp of cornstarch
- 1/2 cup of amaretti cookies, crumbled
Instructions

In a saucepan, combine the rhubarb, orange juice, sugar, and water. Bring to a boil, then reduce heat and simmer for 10 minutes until the rhubarb is tender.

In a small bowl, dissolve the cornstarch in a tablespoon of water. Add the cornstarch mixture to the rhubarb mixture and cook for another 2-3 minutes until thickened.

Divide the rhubarb mixture into serving pots or glasses and refrigerate for at least 2 hours to set.

Just before serving, sprinkle the crumbled amaretti cookies over the pots and enjoy.
