Ingredients

  • 1 cup of butter, softened
  • 1 cup of brown sugar
  • 4 eggs
  • 2 cups of all-purpose flour
  • 1 tsp of baking powder
  • 1 tsp of ground cinnamon
  • 1/2 tsp of ground nutmeg
  • 1/4 tsp of salt
  • 1/2 cup of milk
  • 1 cup of mixed dried fruits (raisins, currants, cherries)
  • 1/2 cup of chopped nuts (almonds, walnuts)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1/4 cup of brandy (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). Grease and line a 9-inch round cake pan with parchment paper.

  2. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.

  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.

  4. Fold in the dried fruits, nuts, lemon zest, orange zest, and brandy (if using). Mix until well combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 2 hours, or until a toothpick inserted into the center of the cake comes out clean.

  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before serving.
