Serves:
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup mixed berries (such as raspberries, blueberries, and blackberries)
- 1 cup chopped nuts (such as walnuts or almonds)
- Powdered sugar, for dusting
Instructions
-
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
-
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
-
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
-
Gently fold in the mixed berries and chopped nuts. Pour the batter into the prepared cake pan.
-
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
-
Once cool, dust the top of the cake with powdered sugar. Decorate with additional berries and nuts if desired. Serve and enjoy!
