Ingredients

  • 2 cups shredded carrots
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/4 cup bourbon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)
  • Cream cheese frosting for serving

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, beat the eggs until frothy. Gradually add the vegetable oil, bourbon, and vanilla extract, stirring well.

  4. Add the wet mixture to the dry ingredients and mix until just combined. Fold in the shredded carrots and chopped walnuts (if using).

  5. Pour the batter into the prepared cake pan and smooth the top.

  6. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  8. Once cooled, frost the cake with cream cheese frosting and garnish with additional chopped walnuts, if desired.

  9. Slice and serve.
