How To Make Zucchini Bars with Brown Butter Frosting

These perfectly moist zucchini bars serve delicious treats, made with shredded zucchini and chopped pecans for a soft and crunchy snack in one bite.

  • cupsgranulated sugar
  • 1cupvegetable oil
  • 3eggs
  • 2cupsall purpose flour
  • 1tspbaking powder
  • ½tspsalt
  • tspground cinnamon
  • 2cupszucchini,(about 3 medium) shredded
  • cupspecans,chopped

For Brown Butter Frosting:

  • 6tbspbutter
  • 6cupspowdered sugar
  • 1tspvanilla
  • 10tbspmilk


  1. Preheat oven to 350 degrees F and grease a 15x10x1-inch pan.

  2. In a medium mixing bowl, add flour, baking powder, salt, and cinnamon. Set aside.

  3. In a mixer, add sugar, oil and eggs and mix until smooth. Add the dry ingredients to the wet ingredients until incorporated.

  4. Stir in zucchini and chopped pecans. Spread evenly in prepared pan.

  5. Cook for 30 to 40 minutes or until a toothpick inserted in the center comes clean. Let bars cool completely.

Brown Butter Frosting:

  1. Heat a medium-sized saucepan to medium heat. Add butter and whisk until it turns brown. Add in powdered sugar, vanilla, and milk. Stir together until smooth.

  2. Spread over cooled bars, then serve and enjoy!
