How To Make Tunisian Vegetable Tagine

A savory and flavorful dish that brings the taste of Tunisia to your table.

Serves:

Ingredients

  • 1 eggplant, cubed
  • 2 zucchinis, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp of tomato paste
  • 1 tsp of cumin
  • 1 tsp of coriander
  • 1 tsp of paprika
  • 1 tsp of turmeric
  • 1 tsp of salt
  • 1 can of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 1/2 cup of water
  • 1/4 cup of chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or tagine over medium heat.

  2. Add in eggplant and sauté until lightly browned, then remove and set aside.

  3. Add onion and garlic to the pot, cooking until softened.

  4. Add in tomato paste, spices, and salt, stirring until fragrant.

  5. Add in zucchini, chickpeas, and diced tomatoes, cooking for about 5 minutes.

  6. Pour in water and add back in the eggplant.

  7. Bring to a simmer and cook for 45-50 minutes, until vegetables are tender and flavors have melded together.

  8. Serve hot, garnished with fresh parsley.
