  • 2 cans of chickpeas, drained and rinsed
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 large tomato, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine chickpeas, red onion, red bell pepper, and tomato.

  2. In a separate bowl, whisk together parsley, mint, olive oil, lemon juice, cumin, salt, and pepper.

  3. Pour the dressing over the chickpea mixture and toss to combine.

  4. Serve chilled or at room temperature.
