Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1 cup Manchego cheese, shredded
  • 1/2 cup chorizo, cooked and crumbled
  • 3/4 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.

  3. Add the cold butter to the flour mixture and use your hands or a pastry cutter to cut it into the flour until the mixture resembles coarse crumbs.

  4. Stir in the shredded Manchego cheese and crumbled chorizo.

  5. Slowly pour in the milk while stirring, just until the dough comes together.

  6. Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it together.

  7. Roll out the dough to about 1/2-inch (1 cm) thickness.

  8. Use a biscuit cutter or round cookie cutter to cut out biscuits from the dough. Place them onto the prepared baking sheet.

  9. Bake in the preheated oven for about 20 minutes, or until the biscuits are golden brown and cooked through.

  10. Serve warm and enjoy!
