Ingredients

  • 4 fillets of white fish (tilapia or sea bass work well)
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tomato, diced
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup white wine
  • 1/4 cup water
  • 1 lemon, sliced
  • Fresh parsley and cilantro, chopped (optional)

Instructions

  1. Preheat oven to 375°F.

  2. In a frying pan, sauté onion, garlic, and tomato with spices until soft.

  3. Transfer mixture to the bottom of a baking dish.

  4. Arrange fish fillets on top of mixture.

  5. Pour white wine and water over fillets.

  6. Top with lemon slices.

  7. Bake for 25-30 minutes.

  8. Garnish with parsley and cilantro (optional).
